Crown daisy is in season right now, appearing so tender and fresh, making you crave it! It’s one of those ingredients that some people really dislike. So, I only make it about once a year, just for myself. This time, I bought a bunch because I couldn’t stop thinking about it, and decided to try a different seasoning than usual. I find that changing up the seasoning when cooking makes a noticeable difference in taste, like I’ve made something significantly different! Perhaps that’s why this seasoned crown daisy tastes so fresh and new compared to what I’ve had before. It’s so delicious that I can’t help but nod my head in approval while eating it alone, haha. Enjoy this simply blanched and seasoned crown daisy! ^^

Ingredients

  • A pinch of salt (for blanching)

Seasoning

  • 1/3 Tbsp salt (or Korean soup soy sauce, adjust to taste)
  • 1/3 tsp MSG or flavor enhancer (optional, for added depth)
  • 1 tsp minced garlic
  • 1 Tbsp ground perilla seeds (deulkkaegaru)
  • A little chopped green onion

Cooking Instructions

Prepare the crown daisy: First, wash the crown daisy thoroughly under running water. Trim off any wilted leaves or tough stems, using only the tender parts. In boiling water with a pinch of coarse salt, blanch the crown daisy for just 30 seconds to 1 minute. Be careful not to overcook it, as it will become mushy; blanch only until the color becomes vibrant. Immediately rinse the blanched crown daisy in cold water to stop the cooking and cool it down. Gently squeeze out excess water by hand. Ensuring the water is well removed will help the seasoning adhere properly without becoming watery.

After squeezing out the water, cut the prepared crown daisy into 2-3 bite-sized pieces. If they are too long, they can be difficult to eat.

Make the delicious seasoning: In a bowl, combine all the seasoning ingredients for the crown daisy salad (salt or Korean soup soy sauce, flavor enhancer, minced garlic, ground perilla seeds). Mix them well. You can adjust the ratio of each ingredient according to your preference. Using a generous amount of ground perilla seeds to add nuttiness is a key feature of this recipe.

Gently mix everything together: Add the prepared crown daisy to the bowl with the seasoning. Gently toss and mix with your hands until the seasoning is evenly distributed throughout the crown daisy.
