I received some fresh Chwinamul from a friend and wanted to enjoy its natural aroma, so I made a simple seasoning without any harsh flavors. This recipe highlights the true essence of Chwinamul.
Main Ingredients- 300g fresh Chwinamul (Aster Scaber)
- 1 tsp salt (for blanching)
Seasoning- 1.5 Tbsp minced green onion
- 2 Tbsp soup soy sauce (adjust to taste)
- 1 tsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Thoroughly wash the fresh Chwinamul under running water. Remove any yellowed or wilted leaves, and trim any tough stems. This preparation ensures a tender and pleasant texture.

Bring a pot of water to a rolling boil. Add 1 teaspoon of salt to the boiling water. Salting the water helps to maintain the vibrant green color of the Chwinamul and makes it crispier.

Add the prepared Chwinamul to the boiling water and blanch for about 1 to 3 minutes. Be careful not to overcook; the Chwinamul should be tender but still have a slight bite. Overcooking can make it mushy.

Immediately after blanching, transfer the Chwinamul to a bowl of cold water. Gently swish and rinse it in the cold water 2-3 times. This rapid cooling stops the cooking process and helps remove any bitterness.

Drain the Chwinamul well and gently squeeze out as much excess water as possible. Gather the Chwinamul into a ball and twist firmly to remove water; this is crucial for the seasoning to adhere properly. In a mixing bowl, combine the minced green onion, minced garlic, soup soy sauce, sesame oil, and toasted sesame seeds. Mix everything together using your hands, pressing and kneading the ingredients as if you were working dough. This technique ensures the seasoning is evenly distributed. Taste and adjust the seasoning with more soup soy sauce if needed.
