Main Ingredients- 100g fresh perilla leaves (approx. 20-25 leaves)
- 1/2 medium onion, thinly sliced
- 1/4 carrot, julienned
- 1 chili pepper (e.g., Korean green chili or red chili), minced (optional)
Seasoning Ingredients- 2 Tbsp red pepper flakes (adjust to your spice preference)
- 2 Tbsp fish sauce (e.g., Kkanari or anchovy)
- 2 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp toasted sesame seeds
- 2 Tbsp red pepper flakes (adjust to your spice preference)
- 2 Tbsp fish sauce (e.g., Kkanari or anchovy)
- 2 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Gently wash the fresh perilla leaves under running water. After washing, place them in a colander and let them drain completely. Ensuring the leaves are thoroughly dry is crucial to prevent sogginess and spoilage.
Step 2
Thinly slice the onion and julienne the carrot. If you enjoy a spicy kick, finely mince the chili pepper. For a milder flavor or if serving to children, you can omit the chili pepper or use a red chili for color.
Step 3
In a mixing bowl, combine all the seasoning ingredients: red pepper flakes, fish sauce, soy sauce, water, minced garlic, sugar, corn syrup, and toasted sesame seeds. Stir well to create a flavorful sauce.
Step 4
Add the sliced onion, julienned carrot, and minced chili pepper (if using) to the prepared seasoning sauce. Gently mix them together with your hands or a spoon until the vegetables are evenly coated with the sauce.
Step 5
Now, it’s time to assemble the perilla leaf kimchi. Lay a perilla leaf flat, spread a thin layer of the seasoned vegetable mixture over it, then place another perilla leaf on top and spread more seasoning. Repeat this stacking process, layering the leaves with the seasoning in between. Applying a moderate amount of seasoning ensures the delicate flavor of the perilla leaves shines through.
Step 6
Once assembled, it’s best to let the perilla leaf kimchi rest in the refrigerator for at least half a day. This resting period allows the flavors to meld beautifully, resulting in a more delicious and well-seasoned kimchi. Enjoy this wonderful side dish with your meals!
