Perilla Kimchi Ingredients

  • 30 fresh perilla leaves
  • 1 stalk of green onion
  • A little bit of carrot
  • 1/2 onion
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp anchovy sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp fish sauce (tuna)
  • 1 Tbsp minced garlic
  • 1/3 cup cold water
  • A little bit of sesame seeds

Cooking Instructions

Step 1

First, to preserve the fragrant aroma of the perilla leaves, it’s crucial to wash them very thoroughly. Gently rub both sides of each perilla leaf to ensure there’s no dirt or debris. After washing, drain the leaves well in a colander to remove excess water.

The vegetables will add a delightful crispiness and a subtle sweetness to your perilla kimchi. Julienne the carrot and onion thinly. Be careful not to cut them too thick, as this can prevent the seasoning from absorbing well and affect the texture.

Finely chop the green onion. The aromatic flavor of the green onion will blend with the seasoning, making the perilla kimchi taste even richer.

Now, let’s make the delicious seasoning! In a large bowl, combine the julienned carrots, onion, and chopped green onion. Stir sufficiently to ensure the vegetables are evenly mixed into the seasoning.

Then, scoop about 1 tablespoon of the prepared seasoning and spread it evenly over the front of the perilla leaves. Stack another 2 perilla leaves on top of the seasoned ones, and repeat the process of spreading the seasoning. Continue layering and seasoning them in stacks of three leaves. Make sure to spread a generous amount of seasoning on the final perilla leaf as well.
