  • 1 bunch of Parsley (approx. 200-300g)
  • 1 Tbsp Coarse Salt (for blanching)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds
  • Pinch of Roasted Salt (for seasoning)

Cooking Instructions

Step 1

First, fill a pot with plenty of water and add 1 tablespoon of coarse salt. Bring it to a boil over high heat. Adding salt to the boiling water helps the vegetables maintain a vibrant, green color and enhances their flavor. Have your boiling water ready.

Step 2

Rinse the parsley thoroughly under running water 2-3 times. To ensure it’s perfectly clean and free from any dirt or small insects, you can soak it in water with a splash of vinegar for about 5 minutes, then rinse again. While washing, trim off any wilted or damaged leaves and tough stems.

Step 3

Once the water is at a rolling boil, gently immerse the stem parts of the prepared parsley into the pot first for about 10 seconds. Then, submerge the entire bunch and blanch for a very short time, no more than 30 seconds in total. Blanching for too long will make it lose its crispness. As soon as the color turns a vibrant green, be ready to remove it.

Step 4

Immediately transfer the lightly blanched parsley to a bowl of cold water to stop the cooking process and enhance its crispness. After chilling, drain the parsley well in a colander. If you have time, letting it drain overnight is ideal, but if you’re in a hurry, you can gently squeeze out excess water with your hands.

Step 5

Once the water is removed, roughly chop the parsley into bite-sized pieces. Considering both the stems and leaves, cutting them into about 4 portions will make them easy to mix.

Step 6

Place the chopped parsley into a mixing bowl. Add 1 tablespoon of minced garlic, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. For a flavor that truly highlights the natural taste of parsley, seasoning with just salt or soy sauce is wonderfully aromatic and delicious. Today, we’ll add extra depth by using roasted salt.

Step 7

Now, use your hands to gently toss and mix the parsley with all the seasonings until evenly combined. It’s important to mix gently so you don’t mash the parsley.
