Exquisite Padeuddeuknamul (Chamnamul) Dish: A Flavorful Side Salad Recipe
Padeuddeuknamul is also known as ‘Bandinamul’. Due to its distinct aromatic flavor, it’s often mistaken for chamnamul. Samyeopchae, true chamnamul, and padeuddeuknamul share similar aromas and tastes, leading to them being commonly referred to as chamnamul. This recipe is one of many side dishes I created using ‘padeuddeuknamul’ purchased locally in Indonesia, and it will add freshness to your dining table. Ingredients- 100g Padeuddeuknamul (Choose fresh, tender leaves)
- Pinch of salt (for seasoning)
- 1/2 Tbsp minced garlic (freshly minced garlic enhances the flavor)
- 1 Tbsp soy sauce (Guk-ganjang or Jin-ganjang can be used; it adds umami)
- 1 pinch of black pepper (adjust to taste)
Cooking Instructions
Step 1
First, thoroughly wash and prepare the padeuddeuknamul. Gently rub the leaves and stems under running water to remove any soil or debris. Shake off excess water, and we’ll move to the next step.
Step 2
Bring a pot of water to a rolling boil. Once boiling, add a pinch of salt. Adding salt while boiling helps to maintain the vibrant green color of the greens and enhances their crisp texture. Add the prepared padeuddeuknamul and blanch for just 30 seconds to 1 minute. Be careful not to overcook, as it can become mushy.
Step 3
Immediately after blanching, rinse the padeuddeuknamul under cold running water to cool it down. This helps to preserve its crispness and keep its vibrant green hue. After rinsing, gently press with your hands to squeeze out as much water as possible. Excess water can prevent the seasonings from adhering well, making the salad taste bland.
Step 4
Place the squeezed padeuddeuknamul in a bowl. Add the minced garlic, soy sauce, salt, and black pepper. Once all ingredients are added, gently mix with your hands, ensuring the seasoning is evenly distributed throughout the greens. Taste and add a tiny bit more salt or soy sauce if needed. Your fragrant and delicious padeuddeuknamul salad is ready!
