We’ve also added minced garlic and scallions, as chwinamul can be tougher and slightly more bitter than chamnamul. For a touch of sweetness, feel free to add a little honey according to your preference.
Ingredients- 1 bag Korean Angelica (Chwinamul, approx. 200g)
- 1 tsp minced garlic
- 1 tsp chopped scallions
- 1 tsp fish sauce
- 1 tsp salt
- 2 drizzles sesame oil (approx. 1 tsp)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Korean Angelica (Chwinamul) tends to have tougher stems than chamnamul, so it requires a slightly longer blanching time. Begin by trimming any tough ends from the chwinamul and washing it thoroughly under cold running water. Bring a pot of water to a rolling boil, add a pinch of salt, and then carefully add the prepared chwinamul. Blanch for about 10 seconds. (While chamnamul only needs about 2 seconds, blanching chwinamul for 10 seconds ensures it’s tender and not chewy.)
Step 2
After blanching, immediately rinse the chwinamul under cold water to stop the cooking process and cool it down. Squeeze out as much excess water as possible with your hands. Transfer the squeezed chwinamul to a mixing bowl. Add minced garlic, chopped scallions, fish sauce, salt, sesame oil, and toasted sesame seeds. Gently mix and massage the ingredients into the chwinamul with your hands until well combined. (Using both fish sauce and salt helps to season the dish perfectly and prevent it from becoming watery, which can sometimes happen if only fish sauce is used.)
