Cooking Instructions

Step 1

Today, we’ll be making delicious gondre rice using fresh, blanched gondre that hasn’t been frozen, along with aromatic shiitake mushrooms. We’ll be using a regular pot instead of a pressure cooker for this recipe. Afterwards, you can enjoy a complete meal with crispy scorched rice (nurungji) and comforting rice water (sungnyung).

Step 2

First, place the soaked rice into the pot. Then, chop the blanched gondre into bite-sized pieces and spread them evenly over the rice. The fragrant aroma of gondre will infuse the rice grains, making it even more delicious.

Step 3

Prepare the 2 fresh shiitake mushrooms by cleaning them. To make them more appealing, especially for children who might dislike large mushroom pieces, slice them into thin strips and arrange them on top of the gondre. The chewy texture and deep umami flavor of the shiitake mushrooms will further enhance the richness of the gondre rice.

Step 4

If the blanched gondre retains sufficient moisture, you can adjust the water for cooking the rice to be approximately the same amount as you would use for regular rice. Be sure to adjust the water quantity based on the moisture content of the gondre.

Step 5

Now, layer the soaked rice, blanched gondre, and sliced shiitake mushrooms in the pot. Pour in the cooking water, close the lid, and bring it to a boil over medium heat for about 10 minutes. After 10 minutes, reduce the heat to low (lower than medium-low) and let it simmer for another 10 minutes, cooking the rice for a total of 20 minutes. Once the rice is cooked, do not open the lid immediately. Let it steam for about 5 minutes before gently mixing the rice and serving your delicious gondre and shiitake mushroom pot rice.

Serve the perfectly cooked gondre and shiitake mushroom rice with a simple seasoning sauce for a fantastic meal. The sauce is made with a ratio of 2 parts soy sauce to 1 part sesame oil, with a pinch of toasted sesame seeds.
