Make Healthy and Delicious Ggondre Rice When You Have No Appetite
Ggondre rice, with its savory and fragrant aroma, is a healthy and nutritious dish that everyone can enjoy. It has very little of the slightly bitter taste characteristic of some vegetables, and its tender texture makes it a favorite. We’ll cook it with chewy shiitake mushrooms to enhance the flavor, and serving it with a flavorful seasoning sauce will revive even the most lackluster appetite, creating a truly special meal. Rice Ingredients- 2 cups white rice
- 1/2 cup glutinous rice (mixed with white rice)
- 40g dried Ggondre leaves (well-soaked)
- 3 shiitake mushrooms
- 2 Tbsp perilla oil (deulireum)
- 2 Tbsp soy sauce for soup (guk-ganjang)
Seasoning Sauce Ingredients- 5 Tbsp soy sauce
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp plum extract (maesil-aek)
- 0.5 Tbsp oligodang (or corn syrup)
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 0.5 Tbsp sesame oil
- 5 Tbsp soy sauce
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp plum extract (maesil-aek)
- 0.5 Tbsp oligodang (or corn syrup)
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 0.5 Tbsp sesame oil
Cooking Instructions
Step 1
First, rinse the dried Ggondre leaves thoroughly under running water. Then, soak them in cold water for at least half a day until well-softened. Rinse the white rice and glutinous rice together, then soak them for about 30 minutes. Drain the rice in a sieve to remove excess water. It’s efficient to prepare the Ggondre while the rice is soaking.
Step 2
Wash the shiitake mushrooms clean, removing any dirt or dust. Pat them completely dry. Since they are quite large, we’re using 3. Slice the caps thinly into about 0.5cm thick pieces. It’s best to remove the tough stems, as they can be used in soups or stews.
Step 3
Rinse the well-soaked Ggondre leaves multiple times until the rinsing water runs clear. Squeeze out as much water as possible by hand. Cut the leaves into bite-sized pieces (about 3-4 cm long). Place the Ggondre in a large bowl, add 2 tablespoons of perilla oil and 2 tablespoons of soy sauce for soup, and gently mix by hand.
Step 4
Heat a pan over medium-low heat. Add the seasoned Ggondre leaves and stir-fry for about 5 minutes. Stir-frying the Ggondre beforehand helps prevent excess moisture when cooking the rice and enhances its flavor, resulting in a tender texture.
Step 5
Now, let’s cook the Ggondre rice. I’m using a pressure cooker for a tender texture, but you can also use a regular pot or an electric rice cooker. Add the soaked rice to the rice cooker, followed by the stir-fried Ggondre leaves, and then the sliced shiitake mushrooms. Use slightly less water than you normally would for cooking rice.
Step 6
If using a pressure cooker, once the steam whistle starts, reduce the heat to low and cook for another 5 minutes. Then, turn off the heat and let it steam for 10-15 minutes. Cooking times may vary depending on the type of rice cooker and the amount of rice, so it’s a good idea to consult your rice cooker’s manual.
Step 7
While the rice is steaming, let’s make the delicious seasoning sauce. In a small bowl, combine 5 tablespoons of soy sauce, 1 tablespoon of red pepper flakes, 1 tablespoon of plum extract, 0.5 tablespoon of oligodang, 2 tablespoons of chopped green onion, 1 tablespoon of minced garlic, 1 tablespoon of toasted sesame seeds, and 0.5 tablespoon of sesame oil. Mix well. You can adjust the amount of soy sauce to your preference.
Step 8
Once the rice is cooked, after letting it steam sufficiently, gently fluff the rice with a rice paddle, mixing the Ggondre leaves and shiitake mushrooms with the rice. Be careful not to mash the rice grains. Transfer the finished Ggondre rice to a wide serving bowl.
