Easy Homemade Vicia unijuga Flower Syrup: Base for Aromatic Flower Tea and Flower Ade

Ingredients- Vicia unijuga flowers 24g
- Honey 12g
- Sugar 12g
Cooking Instructions
Step 1
Gently rinse the Vicia unijuga flowers and thoroughly pat them dry. To avoid damaging the delicate petals, avoid using running water. Instead, swirl them gently in a bowl of clean water about twice.
Step 2
Since I already have many types of syrups at home, I decided to make a small batch of this Vicia unijuga flower syrup. Feel free to adjust the quantities according to your preference.
Step 3
While you can use only sugar, combining honey and sugar in a 1:1 ratio will create a richer flavor and aroma. Honey aids in fermentation and adds a subtle depth.

Add the honey and sugar to the prepared Vicia unijuga flowers. Gently mix them together, being careful not to crush the petals. It’s important to mix them softly so the ingredients are evenly combined.

Transfer the mixture into a clean, sterilized glass jar. The Vicia unijuga flowers are quite long, so you can initially arrange them upright in the jar for a pretty presentation. They will naturally settle as they infuse, so don’t worry too much about the initial look.

Unlike fruit syrups, flower syrups don’t yield much juice, which is why using honey is recommended. Honey coats the ingredients evenly and helps with fermentation. After filling the jar, it’s a good idea to top it off with a little extra honey to prevent the flowers from floating.

Seal the jar tightly and let it ferment at room temperature for about 2 weeks. Your Vicia unijuga flower syrup will be ready! During this time, the honey and sugar will dissolve, infusing the syrup with the flower’s essence and flavor.
Step 8
To enjoy it warm, pour hot water into a mug and add a desired amount of the Vicia unijuga flower syrup. You’ll have a delightful flower tea with a subtle floral aroma and pleasant sweetness.
