Ingredients
- 100g Eosuri Namul
- 1/2 Tbsp minced garlic
- 2 Tbsp chopped green onions (or scallions)
- 1 Tbsp sesame oil
- 1 Tbsp tuna extract (or Korean soup soy sauce)
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare the fresh Eosuri Namul. If you’re new to this vegetable, start by removing any tough stems. The namul we have today is exceptionally fresh, with no yellowing leaves.

To enhance its freshness and clean off any residual dirt, soak the Eosuri Namul in cold water mixed with 2 tablespoons of vinegar for about 10 minutes. Afterwards, rinse it thoroughly under running water three times.
Step 3
Bring a pot of water to a rolling boil with a pinch of salt. Blanch the Eosuri Namul for just 30 seconds to 1 minute, until it slightly wilts. Blanching vegetables in ample water helps preserve their vibrant color and nutrients.
Step 4
Immediately after blanching, transfer the Eosuri Namul to a bowl of cold water to shock it and stop the cooking process. This step is crucial for maintaining a crisp texture.

Gently squeeze out as much excess water as possible from the cooled namul using your hands. Once drained, cut the namul into three bite-sized portions for easier mixing.

Wash the green onions thoroughly, trim the roots, and finely chop them into small pieces. If green onions aren’t available, the white and light green parts of a regular scallion can be substituted.

In a mixing bowl, gently loosen the Eosuri Namul pieces. Add minced garlic (1/2 Tbsp), sesame oil (1 Tbsp), tuna extract (1 Tbsp), and toasted sesame seeds (1 tsp) to one side of the bowl. First, mix the seasonings with a small portion of the namul, then combine everything and gently toss to coat evenly. This method ensures the flavors are well-distributed.
