Fragrant Earl Grey Sablé Cookies

I absolutely love the scent of Earl Grey, so I always order Earl Grey milk tea at Gong Cha. Today, I decided to use this delightful Earl Grey flavor to make some cookies! I’ve made them in the form of sablé cookies, which have a wonderfully crisp texture.
Ingredients- 100g Unsalted Butter, softened
- 50g Powdered Sugar
- 1 Egg Yolk, room temperature
- 120g Cake Flour
- 30g Almond Flour
- 2 Earl Grey Tea Bags
Cooking Instructions
Step 1
Prepare 100g of unsalted butter at room temperature. If you’re using refrigerated butter, you can soften it by microwaving it for about 30 seconds. Make sure it doesn’t melt completely, just becomes soft and pliable.
Step 2
Using a spatula or whisk, cream the softened butter until it’s smooth and free of lumps. Mash it until it has a creamy consistency.
Step 3
Add 50g of powdered sugar to the butter. Mix with a spatula until no dry streaks of sugar remain, ensuring it’s fully incorporated into the butter.
Step 4
Incorporate 1 egg yolk at room temperature. If your egg is cold, you can gently warm it by placing it in a bowl of warm water for about 5-10 minutes to remove the chill. Mix thoroughly until the batter is smooth and doesn’t look curdled. Avoid overmixing.
Step 5
Now it’s time to add the dry ingredients for the Earl Grey cookies. Sift 120g of cake flour and 30g of almond flour directly into the bowl. Sifting helps prevent lumps and results in a tender cookie.
Step 6
Open the 2 Earl Grey tea bags and add the tea leaves to the mixture. Gently mix with a spatula until all ingredients are just combined and no dry flour is visible. Continue to mix gently until the dough is smooth.
Step 7
Finally, bring the cookie dough together with your hands. Gently knead it just enough until it forms a cohesive ball. Be careful not to overwork the dough, as this can make the cookies tough.
Step 8
Place the dough on a piece of plastic wrap. Shape it into a long, cylindrical log, resembling a log of wood. Wrap it tightly in the plastic wrap. Alternatively, you can use parchment paper to shape and roll the dough into a log. Refrigerate for about 1 hour, or until firm enough to slice.
Step 9
After 1 hour, remove the firm dough log from the freezer. Using a sharp knife, slice the dough into rounds about 1 cm (approximately 3/8 inch) thick.
Step 10
Arrange the sliced cookies on a baking sheet lined with parchment paper, leaving some space between them. Bake in a preheated oven at 190°C (375°F) for about 18 minutes. Please note that oven temperatures and baking times can vary, so adjust as needed based on your oven’s performance. Bake until the edges are lightly golden brown.
Step 11
Once baked, carefully remove the cookies from the oven. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This prevents them from breaking while still hot.
