  • 6cm piece white part of a green onion
  • 1/4 onion
  • 2 Tbsp soybean paste (doenjang)
  • 2/3 Tbsp minced garlic
  • 1.2 liters rice water (for broth)
  • 1/2 red chili pepper

Broth Ingredients

  • 5 dried anchovies (for soup stock)
  • 2 dried flatfish (deodeok)
  • 2 dried shrimp
  • 1 piece dried kelp (approx. 5x5cm)
  • 1/2 green chili pepper (optional, for a spicier kick)

Cooking Instructions

First, prepare the vegetables. Finely mince the onion. Thinly slice the white part of the green onion and the red chili pepper diagonally. If using the green chili pepper, slice it thinly as well.

Preheat a pot, then add the dried anchovies, dried flatfish, dried shrimp, dried kelp, and green chili pepper. Stir-fry them over low heat until lightly browned. This step will help develop a deeper savory flavor in the broth.

Pour the prepared rice water into the pot with the stir-fried broth ingredients. Add the minced onion and dissolve the soybean paste. It’s best to keep the lid off at this stage to allow the rich aroma of the soybean paste to infuse the soup without escaping. Bring to a boil over high heat.

Once the soup comes to a rolling boil, add the thoroughly cleaned daylily greens, minced garlic, sliced red chili pepper, and green onion.
