Muffin Batter Ingredients- 2 Eggs
- 80g Cake Flour

Step 1
First, prepare the apple for topping by peeling it and slicing it into thin, 3-5mm thick triangular pieces. In a bowl, cream the softened butter using a whisk until smooth. Then, add the sugar, honey, and salt, and continue creaming with a hand mixer or whisk until the mixture is light and fluffy, resembling pale yellow butter. This step is crucial for a tender muffin crumb. Next, add the egg yolks one at a time, mixing well after each addition to prevent the mixture from curdling. Gradually incorporate the remaining egg whites in three or more additions, mixing thoroughly after each addition. Finally, add a few drops of vanilla extract and gently combine. This creates the base for your moist and delicious muffin batter. Ensure the mixture is smooth and creamy before proceeding.

In a separate bowl, sift together the cake flour, baking powder, and ground cinnamon. Sifting ensures an even distribution and prevents lumps. Adjust the amount of milk based on the size of your eggs; use about 30g for large eggs and up to 50g for smaller eggs. The final batter should have a consistency slightly thicker than pancake batter.

Line your muffin tin with paper liners and fill each cup about 70-80% full with the prepared batter. Avoid overfilling, as the muffins will rise during baking. Place one prepared apple slice decoratively on top of the batter in each muffin cup. This recipe uses one slice for 4cm mini muffins; feel free to use 2-3 slices for standard-sized muffins. For an extra burst of flavor, sprinkle a little more cinnamon over the apple slices if desired. Generously top the muffins with peanut butter streusel for a delightful crunchy texture. Preheat your oven to 170°C (340°F). Bake the mini muffins for about 15 minutes and standard-sized muffins for about 25 minutes. Baking times may vary depending on your oven’s specifications. To check for doneness, insert a skewer into the center of a muffin; it should come out clean. If it comes out with batter attached, bake for an additional 5 minutes. Once baked, remove the muffins from the oven and let them cool completely on a wire rack before enjoying.
