Main Ingredients- 1.5kg Fresh Apples (thoroughly washed)
- 500g Sugar (white or brown, adjustable to taste)
- Soju for Liqueur (25% ABV or higher, enough to cover the fruit)

Step 1
First, it’s crucial to prepare your glass jar thoroughly for making the liqueur. Sterilize the jar by boiling it in water for about 10 minutes. To prevent the glass from cracking due to sudden temperature changes, place the jar in cold water from the beginning and let it heat up gradually. After sterilization, ensure the jar is completely dry before use to prevent mold growth.
Step 2
Rub the apples with about 2 tablespoons of baking soda, scrubbing the surface gently. Rinse them thoroughly until they feel clean. Then, fill a basin with enough water to cover the apples and add 2 tablespoons of vinegar. Let the apples soak for 10 minutes to remove pesticides and impurities.

Rinse the cleaned apples once more under running water. When drying them, use kitchen towels to meticulously wipe away all surface moisture. Any remaining water can cause the apples to soften prematurely or spoil, reducing the shelf life of your liqueur.

Cut the prepared apples into bite-sized pieces. Be sure to remove the tough stem end, the core, and all the seeds. The seeds can impart a bitter taste, so removing them is highly recommended.

Now it’s time to add the soju. Fill the glass jar only up to about 80% of its capacity. This is important because the fermentation process can produce gases that expand, so leaving some headspace is crucial for safety.

Seal the mouth of the jar tightly with plastic wrap or a food-grade seal. Store the sealed liqueur in a cool, dark place away from direct sunlight for at least 3 months to mature.
