This is a simple yet delightful scrambled egg dish featuring fresh tomatoes. Ingredients- 2 Large Eggs
- 2 Tbsp Milk (for extra fluffiness)
- 2 Pinches Salt (to taste)
- Pinch of Black Pepper (for flavor)
- 1 Medium Tomato (ripe and fresh)
- 1/4 Small Onion (adds sweetness and depth)
- 1 Tbsp Butter (for richness and flavor)
Cooking Instructions
Step 1
First, crack 2 large eggs into a bowl. Add 2 tablespoons of milk, 2 pinches of salt, and a pinch of black pepper. Whisk everything together gently with a fork or whisk until well combined and slightly frothy. This step ensures a tender and delicious scramble.
Step 2
Next, prepare your fresh tomato and onion. Wash 1 medium tomato and 1/4 small onion. Dice the tomato into roughly 1.5cm (about 0.6 inch) pieces, removing the core. Finely chop the onion into about 0.5cm (about 0.2 inch) pieces. These chunkier cuts will provide a pleasant texture.
Step 3
Heat 1 tablespoon of butter in a non-stick skillet over medium-low heat. Allow the butter to melt completely until it’s fragrant. Be careful not to let the butter burn, so adjust the heat as needed.
Step 4
Once the butter is melted and sizzling gently, add the diced tomato and chopped onion to the skillet. Spread them evenly and sauté over medium heat for about 2-3 minutes, or until the onion becomes translucent and tender. Stir gently to avoid breaking down the tomatoes too much.

When the onions are soft and fragrant, pour the prepared egg mixture evenly over the vegetables in the pan. Let the eggs start to set slightly around the edges without stirring immediately. Keep the heat at medium.

As the eggs begin to cook and form soft curds, gently push the cooked portions towards the center with a spatula or chopsticks, allowing the uncooked egg to flow underneath.
