Main Ingredients
  • 150g fresh spinach
  • 4 fresh eggs
  • 20g unsalted butter
  • 1 Tbsp minced garlic
  • Pinch of salt

  • 1 Tbsp olive oil
  • 1 pinch of salt

Cooking Instructions

Step 1

First, prepare the spinach. Wash the spinach thoroughly under running water to remove any dirt or debris from between the leaves. Gently pat dry the washed spinach.

Step 2

In a large bowl, crack the 4 fresh eggs. Add a pinch of salt to season them lightly and to help eliminate any eggy smell. Whisk the eggs gently with chopsticks or a whisk until the yolks and whites are well combined.

Step 3

Heat a pan over medium heat and add 1 tablespoon of olive oil. Pour in the beaten eggs. As the eggs begin to set at the bottom, use chopsticks to quickly and lightly stir the eggs, creating fluffy scrambled eggs. Cook them only about 80% of the way to maintain a soft texture.

Step 4

Once the scrambled eggs are about 80% cooked, immediately transfer them to a clean plate to prevent overcooking. The pan can be used as is for the next step.

Step 5

Now, in the same pan, add 20g of unsalted butter and 1 Tbsp of minced garlic. Melt the butter over low heat, stirring gently to infuse the butter with the garlic aroma. Cook until the garlic is fragrant but not browned, creating a garlic-infused oil.

Step 6

Add all the prepared spinach to the pan. Sprinkle in a little more salt and stir-fry. Cook over medium-high heat until the spinach wilts and becomes tender, which should be quick to preserve its fresh flavor.

Step 7

Once the spinach has wilted, return the pre-cooked scrambled eggs to the pan. Gently toss everything together for about 30 seconds, being careful not to break the eggs too much. This completes your nutritious and delicious Spinach and Egg Stir-fry!
