Make a Fluffy Scrambled Egg Sandwich, Perfect for Children’s Day Picnic Lunches
A sandwich filled with incredibly fluffy and tender scrambled eggs.
Ingredients- 4 slices of bread
- 5 large eggs
- 1/2 cup heavy cream (for extra fluffiness)
- 1 tablespoon granulated sugar
- A pinch of salt
- 2 tablespoons mayonnaise
- 1 tablespoon cooking oil
Cooking Instructions
Step 1
In a large bowl, crack 5 eggs. Add 1 tablespoon of sugar for a touch of sweetness and 1/2 cup of heavy cream to ensure a wonderfully fluffy texture. Season with a pinch of salt. Whisk everything together gently with a fork or whisk until well combined and smooth, without any lumps.
Step 2
Heat 1 tablespoon of cooking oil in a non-stick pan over medium-low heat. Pour the whisked egg mixture into the pan. Using chopsticks or a spatula, gently stir and fold the eggs from the edges towards the center as they cook to create soft, fluffy scrambled eggs. Avoid high heat to prevent them from becoming dry.
Step 3
When the eggs are about 70-80% cooked and still look slightly wet, gently tap the bottom of the pan on the counter a couple of times. This helps to release any trapped air bubbles, resulting in an even more tender and moist scramble.
Step 4
Reduce the heat to low. Carefully fold the scrambled eggs like you would for an omelet or tamagoyaki. Fold it over 2-3 times to allow it to cook through gently. This helps maintain a cohesive shape and ensures the center is cooked through while remaining moist. Let it cook further on the residual heat of the pan.
Step 5
Lightly toast the 4 slices of bread until golden brown, either in a toaster or in a dry pan. Spread 2 tablespoons of mayonnaise evenly on one side of each toasted bread slice. The mayonnaise adds a lovely creaminess and flavor base.
Step 6
Carefully place the cooked, folded scrambled egg mixture onto one of the mayonnaise-spread bread slices. Try to maintain its shape as you transfer it. Top with the remaining slice of bread to complete the sandwich.
Step 7
Using a sharp knife, trim off the crusts from the sandwich for a neater presentation. Then, cut the sandwich into your desired serving size. You can cut it into halves, quarters, or even bite-sized pieces, especially for children. Cutting it into four squares is a convenient option.
