A Heartwarming Potato Egg Drop Soup: Tender Potatoes Meet Silky Eggs
Eggs, a pantry staple, are incredibly versatile! We often make simple egg drop soup at home. It’s delicious on its own, but adding ingredients like potatoes, dried pollack, or dumplings before a final swirl of egg creates a wonderfully soft texture, perfect for a morning meal. Today, I’ve made a comforting egg drop soup with potatoes. The soft potatoes and tender eggs complement each other beautifully.
Ingredients- 2 potatoes
- 1 green onion (separate white and green parts)
- 2 Tbsp soy sauce for soup (guk-ganjang)
- 5 cups anchovy-kelp broth
- 2 eggs
- Pinch of salt (for eggs)
- Pinch of black pepper (for finishing)
Cooking Instructions
Step 1
First, wash and peel the 2 potatoes. Cut them into bite-sized pieces, about 1cm thick, in a half-moon or fan shape. Avoid cutting them too thinly, as they might break apart during cooking.
Step 2
Place the prepared potatoes in a pot along with the white part of 1 green onion, thinly sliced diagonally. Pour in 5 cups of anchovy-kelp broth. If you don’t have pre-made broth, you can make your own by boiling water with dried kelp and anchovies.
Step 3
Add 2 tablespoons of soy sauce for soup to enhance the savory flavor, and bring the soup to a boil over high heat. Let it boil until the broth is bubbling vigorously.
Step 4
Once the broth is boiling, reduce the heat to medium or low. Crack the 2 eggs into a bowl, add a tiny pinch of salt to remove the chalazae (egg white stringy bits), and whisk them gently until smooth. Slowly pour the beaten eggs into the simmering soup.
Step 5
After pouring in the eggs, gently stir the soup about 2-3 times with a ladle, making large, slow motions to allow the egg to form soft curds. Avoid stirring too vigorously, as this can break the egg into small, messy pieces.
Step 6
Finally, add the green part of the green onion, sliced diagonally, and a pinch of black pepper to taste. Your delicious Potato and Egg Drop Soup is ready! Enjoy it while it’s warm.
