Fluffy Egg and Cheese Toast
Super Simple Breakfast: Delicious Egg and Cheese Toast Recipe
I originally planned to just have a fried egg and two slices of toast for breakfast. But seeing some mozzarella cheese in the fridge, I wondered what it would be like to add it to the egg. So, I tried it! The result is a fantastic, easy-to-make breakfast where the melted cheese creates a wonderful harmony with the egg.
Main Ingredients- 2-3 fresh eggs
- 2 slices of soft bread
- Pinch of salt
- Pinch of pepper
- Dried parsley flakes (optional, for added flavor)
Cooking Instructions
Step 1
In a non-stick frying pan (I used a small wok pan), add a little canola oil and gently crack in 2-3 eggs. Lightly break the yolks early on so they spread evenly when cooked. Sprinkle generously with mozzarella cheese to your liking. Tip: If you use too many eggs, the mixture will be too thick and won’t cook through quickly, so 2 eggs are recommended for best results.
Step 2
Reduce the heat to low and cook until the cheese is mostly melted. High heat will brown the bottom of the eggs too quickly and make them difficult to cut later. Season with salt and pepper to taste! I added parsley just for fun. While the eggs are cooking, toast your bread slices.
Step 3
Carefully remove the cooked egg and cheese from the pan. Using a knife, cleanly cut it into 4 equal portions. It should slice through smoothly.
Step 4
Place the cut egg and cheese portions attractively onto the toasted bread slices. The cheese will be slightly melted, blending beautifully with the bread.
Step 5
You can either top with the other slice of bread to make a sandwich, or simply enjoy them open-faced by placing two portions of the egg and cheese on one slice of toast. It’s delicious either way! Best enjoyed immediately while warm.
