Ingredients- 5 imitation crab sticks (kani kama)
- 4 fresh eggs
- 1/4 stalk fresh green onion (scallion)
- 3 Tbsp cooking oil
- 0.5 Tbsp oyster sauce
- 1 Tbsp sesame oil
- Sesame seeds, for garnish
Cooking Instructions
Step 1
First, prepare 1/4 stalk of fresh green onion. You can use both the white and green parts.
Step 2
Finely mince the prepared green onion. Chopping it very small will make it easier for children to eat. This minced onion will add a subtle aroma when sautéed later.

In a clean bowl, crack the 4 fresh eggs. Whisk them gently until the yolks and whites are well combined. Removing the chalazae (the white, rope-like bits) will result in a smoother scrambled egg texture.

Heat 3 tablespoons of cooking oil in a non-stick pan over medium-low heat. Add the minced green onion and sauté slowly until fragrant and slightly golden, about 1-2 minutes. This step creates ‘green onion oil,’ infusing the oil with the onion’s aromatic flavor.

Once the green onion oil is fragrant, add the 5 imitation crab sticks, shredded or cut into bite-sized pieces (about 2-3 cm), to the pan. Stir-fry them together with the green onion for about 1 minute, allowing the crab sticks to absorb the flavors.

When the crab sticks are partially cooked, pour the beaten eggs evenly over the pan. As the eggs begin to set, gently stir and scramble them with chopsticks or a spatula to create soft, fluffy curds. Be careful not to cook over high heat, as this can make the eggs tough.

When the eggs are about 70-80% cooked, add 0.5 tablespoon of oyster sauce along the edge of the pan. The savory depth of the oyster sauce will enhance the overall flavor of the dish.
