Cloud Bread Ingredients- 90g Egg Whites (approx. 3 large egg whites)
- 30g Sugar (granulated or raw sugar)
- 10g Cornstarch (sifted)
- 1-2 drops Blue Food Coloring (or your preferred color)
Cooking Instructions
Step 1
In a clean, dry bowl, add the 90g of egg whites. Begin whisking with an electric mixer on the lowest speed until foamy. Mix slowly until you achieve a generous amount of foam. Be careful, as high speeds can cause the foam to collapse quickly.
Step 2
Gradually add the 30g of sugar in 2-3 additions, increasing the mixer speed to medium-high. Whip until stiff, glossy peaks form (a ‘stiff peak’ stage). When you lift the whisk, the tip of the peak should curl slightly but still hold its shape.
Step 3
Sift the 10g of cornstarch over the meringue. Gently fold it in using a spatula, lifting from the bottom and folding over to avoid deflating the meringue. Mix just until no dry powder is visible, as overmixing can cause the meringue to collapse.
Step 4
Add 1-2 drops of blue food coloring onto the meringue. Gently mix on low speed just enough to create a subtle pastel blue hue. Avoid adding too much coloring, as it can make the bread texture gritty. Adjust the amount carefully to achieve your desired color.
Step 5
Line a baking sheet with parchment paper or a Teflon sheet. Spoon or pipe the blue meringue mixture onto the prepared sheet, forming cloud-like shapes. Imagine fluffy clouds and stack them loosely for a more charming appearance.

Use a spatula or the back of a spoon to gently smooth the surface of the meringue shapes. Aim for a slightly rounded, puffy look rather than a flat surface, which will give the bread more dimension after baking.
