  • 3 Tbsp corn syrup
  • 1 Tbsp sugar
  • 1 cup chickpea cooking water
  • 1 Tbsp sesame oil
  • Sesame seeds, for garnish

Cooking Instructions

Begin by preparing the chickpeas. Rinse dried chickpeas thoroughly and soak them in plenty of water for at least 5 hours, or preferably overnight, until they are fully plumped and softened.

Place the soaked chickpeas in a pot and cover them generously with water. Bring to a boil over high heat, then reduce to medium heat and simmer for about 13 minutes, until tender but not mushy. Check for doneness periodically.

Once cooked, drain the chickpeas using a sieve. Importantly, reserve the cooking water. This flavorful liquid will be used to create the braising sauce.

Now, let’s prepare the braising liquid. In the same pot, combine 1 cup of the reserved chickpea cooking water with the drained, cooked chickpeas.

Add the soy sauce (4 Tbsp), sugar (1 Tbsp), and corn syrup (3 Tbsp) to the pot. Stir everything together well. Place over medium-low heat and begin to simmer, allowing the flavors to meld and the chickpeas to absorb the sauce.

Continue to simmer until the liquid has reduced and thickened, coating the chickpeas in a glossy glaze. When the sauce is nearly gone and has a syrupy consistency, turn off the heat. Stir in 1 Tbsp of sesame oil for a nutty aroma and garnish generously with sesame seeds. Enjoy immediately, or store in the refrigerator for later.
