First, prepare the vegetables for the omelet. Peel and wash the potato and onion. Finely julienne them along with the carrot into strips about 0.5 cm thick. Slice the mushrooms into bite-sized pieces. Cut the Spam into strips of similar thickness to the vegetables. In a bowl, crack the 4 eggs and beat them gently with a fork or whisk until smooth, breaking up the yolks.
