- Tonkatsu sauce, to taste
- Mayonnaise
- Katsuobushi (bonito flakes) – optional
Cooking Instructions
Step 1
First, thinly shred the washed cabbage. It’s best to shred it thinly so the cabbage retains a pleasant crispness.
Step 2
Cut the cleaned squid into bite-sized strips. Chop the shrimp into appropriate sizes. Also, slice the bacon into strips similar in length to the squid.
Step 3
Heat a lightly oiled pan over medium heat. Add the shredded cabbage, squid, shrimp, and bacon. Stir-fry until the ingredients are slightly softened, about 2-3 minutes. This process enhances the natural sweetness of the ingredients.
Step 4
In a large bowl, crack and whisk the 4-5 eggs. Add the stir-fried ingredients and mix thoroughly. Reduce the pan heat to medium-low. Ladle the mixture into the pan, forming round, thick pancakes. Since there’s no flour, they can be fragile. Carefully flip them once the edges start to look golden and set. You can make 2-3 smaller pancakes or one large one. Making them thicker will result in a moister and more delicious pancake.
Step 5
Place the cooked cabbage pancakes on a plate. Drizzle generously with tonkatsu sauce and mayonnaise according to your preference. This sauce combination provides ample flavor without needing any extra seasoning.
Step 6
Finally, sprinkle with katsuobushi (bonito flakes) if desired, for an extra layer of flavor. You can omit this if you don’t have it. Enjoy your delicious pancake!
