Clean and Savory Flounder Seaweed Soup
Enjoy a light and refreshing Flounder Seaweed Soup made with boneless, skinless flounder fillets. This soup is perfect for special occasions or as a nourishing meal during seasonal changes.
Ingredients- Boneless Flounder Fillets (Gashi Jero) – 3 packs
- Soaked Dried Seaweed – 1 cup (generous)
- Perilla Oil – 1/2 Tbsp
- Anchovy Broth – 800ml
- Soy Sauce for Soup – 2 Tbsp
Cooking Instructions
Step 1
First, let’s prepare the flounder. The ‘Gashi Jero Flounder’ is already deboned and de-skinned, making it very convenient to cook. Cut the flounder into bite-sized pieces. Avoid cutting them too small, as the fish might break apart during cooking. Aim for substantial pieces, about 3-4 cm in size. (Tip: I cut them into 4 pieces, but 3 pieces would have been even better. Keep this in mind!)
Step 2
Soak the dried seaweed in cold water for about 30 minutes until rehydrated. Drain the soaked seaweed lightly. Heat 1/2 tablespoon of perilla oil in a pot. Add the drained seaweed and sauté until it becomes tender and fragrant. Stir-frying the seaweed in perilla oil brings out a wonderful nutty aroma.
Step 3
Once the seaweed is softened, pour in 800ml of the prepared anchovy broth and bring it to a boil over high heat.
Step 4
Seaweed soup is best when simmered for a long time to develop its flavors. Reduce the heat to medium-low once the broth boils, and let it simmer gently, partially covered, for at least 10 minutes. This allows the seaweed’s essence to fully infuse into the broth.
Step 5
Now it’s time to add the prepared flounder. Gently add the flounder pieces to the pot, stirring carefully to avoid breaking them. Season the soup with 2 tablespoons of soy sauce for soup. (Tip: If you usually add garlic, you can add a little minced garlic at this stage. However, for a cleaner taste, I’m omitting it. Adjust to your preference.)

Finally, let the soup simmer for another minute or so until the flounder is cooked through and the flavors meld together. This completes your delicious Flounder Seaweed Soup! Enjoy this warm and savory soup.
