Homemade Stir-Fried Gochujang Recipe! Make Delicious Bibimbap with it!
Here’s a recipe for homemade stir-fried gochujang paste that’s perfect to keep on hand. We’ll show you how to make a delicious paste using simple vegetables and seasonings, and then use it to create a hearty and satisfying bibimbap with ingredients you already have at home!
For the Stir-Fried Gochujang- 1/2 onion (small)
- 1/2 stalk scallion or green onion (white part)
- 1 Cheongyang chili pepper (adjust for spice preference)
For the Stir-Fried Gochujang Seasoning- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp soy sauce
- 4 Tbsp oligo당 (corn syrup) or mulyeot (starch syrup)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp perilla oil
- Pinch of black pepper
- 1/3 cup water (approx. 60ml, using a paper cup)
For the Bibimbap (Customizable)- 2 bowls cooked rice (approx. 400g)
- Assorted vegetables (lettuce, perilla leaves, bean sprouts, etc.)
- Side dishes (pickled radish, dried radish strips, stir-fried fish cakes, seasoned vegetables, etc.)
- 1 egg (for frying)
- A little seaweed flakes

Cooking Instructions
Step 1
In a pan, combine all the seasoning ingredients for the stir-fried gochujang paste. Measure out 3 Tbsp gochujang, 3 Tbsp soy sauce, 2 Tbsp gochugaru, and 4 Tbsp oligo당. Heat over medium heat, stirring constantly to prevent burning. Cook for 2-3 minutes until the seasonings are smoothly incorporated and form a paste.
Step 2
Once the seasoning mixture begins to bubble, add the prepared vegetables and stir-fry them together. Finely chop the onion to add sweetness, slice the scallions thinly for aroma, and mince the Cheongyang chili pepper (seeds removed if you prefer less heat) for a spicy kick. Continue to stir-fry for about 2 minutes until the vegetables are tender and well combined with the sauce.
Step 3
To adjust the consistency and prevent the paste from becoming too thick, add water. Pour in 1/3 cup of water (approximately 60ml, measured with a paper cup) and mix well. Adding water will soften the paste, making it easier to mix with rice and other ingredients. Continue to simmer for 1-2 minutes until the sauce has slightly reduced and thickened.
Step 4
Finish by adding 1 Tbsp of perilla oil for a nutty aroma and a pinch of black pepper. Perilla oil helps to mellow the spiciness of the gochujang, while pepper enhances the overall flavor. Stir everything together one last time to complete your delicious stir-fried gochujang paste.
Step 5
This stir-fried gochujang paste can be stored in an airtight container in the refrigerator for 1-2 weeks. It’s not only a great side dish for rice but also works wonderfully as a dipping sauce or as a seasoning for various dishes.

Now, let’s use this flavorful paste to make a hearty bibimbap! Start by placing two generous bowls of warm cooked rice (about 400g) into a large mixing bowl.

The key to a great bibimbap is variety! Feel free to use any vegetables or side dishes you have on hand. Today, we’re using ingredients from the fridge. While finely chopped pickled radish (danmuji) adds a nice crunch, we’ve opted for rehydrated and finely chopped dried radish strips (mool-maengi) for a different texture and flavor today. It offers a unique and pleasant chew.
Step 8
Tear fresh lettuce leaves into bite-sized pieces and add them to the bowl. Their crispness and refreshing taste complement the bibimbap perfectly. You can also add perilla leaves or baby greens if you like.
Step 9
Crispy seaweed flakes add an extra layer of umami. Crumble some seasoned seaweed (gim) or sprinkle prepared seaweed flakes over the top for added richness.

Incorporate any leftover side dishes. For instance, sweet and savory stir-fried fish cakes or seasoned vegetable banchan can make your bibimbap even more satisfying. Make sure to prepare these ingredients in bite-sized pieces.

Finally, top the rice with a perfectly fried egg, cooked sunny-side up. Breaking the runny yolk and mixing it in will add a delightful creaminess. Generously spoon the freshly made stir-fried gochujang paste over everything.
