Introducing a Spam onigiri recipe that adds umami and a rich texture by utilizing leftover anchovy stir-fry. It’s perfect as a snack for kids or a simple meal!
Main Ingredients- 2 bowls of warm cooked rice
- 60g Spam (finely diced)
- 4 Tbsp anchovy stir-fry
- 2 Tbsp minced onion
- 1 tsp soy sauce
- Pinch of black pepper
- Pinch of salt (to taste)
- 2 sheets of seaweed (nori for sushi/onigiri)
Rice Seasoning- 1 Tbsp sesame oil
- 1 tsp sesame seeds
- 2 tsp black sesame seeds
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
First, let’s prepare the filling for the onigiri. Heat a pan over medium-low heat. Add the finely diced Spam and minced onion, and stir-fry until lightly browned. The Spam will render some of its fat, which will add delicious flavor as it cooks with the onion.
Step 2
Once the onion becomes translucent and the Spam is slightly cooked, add 1 tsp of soy sauce and a pinch of black pepper. Stir quickly to combine. The soy sauce adds a touch of umami, and the pepper helps to remove any gamey odors, enhancing the overall flavor.
Step 3
Now, add the 4 Tbsp of anchovy stir-fry to the cooked Spam and onion mixture. Stir well to combine everything. The savory and umami flavors from the anchovy stir-fry will blend with the Spam, significantly upgrading the taste of your onigiri.
Step 4
Next, let’s season the rice. In a bowl with 2 bowls of warm rice, add 1 Tbsp of sesame oil, 1 tsp of sesame seeds, and 2 tsp of black sesame seeds. Gently mix with a spatula, being careful not to mash the rice grains. This will help maintain the fluffy texture of the individual rice grains.
Step 5
Now it’s time to shape the onigiri. Line your onigiri mold (or any shape mold you prefer) with about 1/3 of the seasoned rice. Then, add a generous spoonful of the prepared Spam and anchovy stir-fry filling. Cover with the remaining seasoned rice, and press down firmly with the mold to shape it. If you don’t have a mold, you can shape them by hand.
Step 6
Finally, wrap each shaped onigiri with half a sheet of seaweed (nori). To help the seaweed stick better, you can lightly dampen the edges before wrapping. For an extra touch, you can sprinkle some sesame seeds onto the seaweed before wrapping. Your delicious Spam and anchovy fried rice onigiri are now ready to enjoy!
