Coarsely julienne the onion and cut the green bell pepper into large pieces after removing the seeds. Slice the green onion diagonally to add aroma, and slice the garlic thinly. If you prefer a spicy kick, finely mince the jalapeño after removing the seeds.

Heat a generous amount of cooking oil in a wok or large skillet over medium-high heat. First, add the carrots and stir-fry them briefly to bring out their color. Next, add the cabbage and stir-fry until it starts to soften. Once the vegetables are somewhat cooked, add the green bell pepper, onion, and green onion. Stir-fry quickly over high heat to maintain their crisp texture, which is key.

Push the stir-frying vegetables to one side of the pan. Add the thinly sliced garlic to the empty space and sauté until fragrant.
