A simple yet healthy meal made with leftover mushroom bits from your fridge. Enjoy this delicious risotto that’s perfect for a quick and nutritious meal!
Main Ingredients- Assorted mushrooms (as much as you like, any kind)
- 1 stalk green onion (scallion)
- 1 Tbsp minced garlic
- 2 slices cheddar cheese
- 100g mozzarella cheese
Seasoning & Sauce- 1 Tbsp oyster sauce
- 1/2 bottle (approx. 150-200g) tomato sauce
- 1 Tbsp oyster sauce

Cooking Instructions
Step 1
First, heat a pan over medium heat, add 1-2 tablespoons of cooking oil, and sauté the chopped green onion and minced garlic until fragrant, creating a green onion-garlic infused oil. Be sure to cook over medium-low heat to prevent burning.
Step 2
Once the aroma of green onion and garlic is released, add two bowls of cooked rice (about 2 servings). Stir well with a spatula to prevent the rice from sticking to the bottom of the pan. Cook for about 1-2 minutes, ensuring the rice is well combined with the oil.
Step 3
When the rice is partially stir-fried, add 1 tablespoon of oyster sauce and mix well to season. Add a pinch of black pepper for extra flavor. Then, add your assorted mushrooms, cut into bite-sized pieces, and stir-fry them generously. Continue cooking until the mushrooms soften.
Step 4
Once the mushrooms are cooked through, add half a bottle of store-bought tomato sauce (approx. 150-200g). Stir continuously to combine it with all the ingredients. Cook for another 2-3 minutes, allowing the tangy and sweet tomato sauce to permeate the rice and mushrooms.
Step 5
When all the ingredients are well combined and the mixture has thickened to a risotto consistency, turn off the heat. The key is to have the rice cooked through and moist, without clumping.
Step 6
Transfer the cooked mushroom tomato risotto into a serving bowl.
Step 7
Place one slice of cheddar cheese on top of the risotto, followed by a generous sprinkle of 100g of mozzarella cheese. The melting cheese will enhance the richness of the risotto.

Microwave for approximately 2 minutes and 30 seconds, or until the cheese is completely melted. (Adjust the time based on your microwave’s power.)
