- 1 Tbsp Minced garlic
- 1/2 Tbsp Sesame oil
- Pinch of Black pepper
- Pinch of Toasted sesame seeds (for garnish)
- 2 Tbsp Soy sauce
- 1 Tbsp Tonkatsu sauce (for enhanced flavor!)
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 1/2 Tbsp Sesame oil
- Pinch of Black pepper
- Pinch of Toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Peel the onion and thinly slice it into strips. Slicing them this way helps the marinade penetrate evenly for better flavor.
Step 2
Wash the scallions and slice them diagonally, keeping both the white and green parts. Diagonal cuts are more suitable for eating with bulgogi compared to chopping them finely.
Step 3
Peel the carrot and julienne it thinly. This adds not only color but also a delightful crisp texture to the dish.
Step 4
Lightly pat the pork shoulder dry with paper towels to remove excess blood. Then, cut it into bite-sized pieces. Ensure the pieces aren’t too thick, as this will help the marinade absorb better. Aim for a moderate thickness.
Step 5
Place the cut pork shoulder in a bowl. Add 1 tablespoon of sugar and mix well. The sugar helps to tenderize the meat and aids in marinade absorption. Let it marinate for about 5 minutes.
Step 6
Add the sliced onion, diagonally cut scallions, and julienned carrots to the sugar-marinated pork shoulder. Including these vegetables will contribute to a richer flavor profile.
Step 7
Now, add all the marinade ingredients: 2 tablespoons of soy sauce, 1 tablespoon of tonkatsu sauce, 1 tablespoon of minced garlic, and a pinch of black pepper. Mix everything thoroughly with your hands until well combined. The tonkatsu sauce adds a deep, unique flavor that sets this bulgogi apart from standard recipes.
Step 8
Heat a pan over medium heat. Add the marinated pork shoulder and vegetables. Stir occasionally as the ingredients cook and meld together.
Step 9
As the bulgogi cooks, juices from the meat and vegetables will be released. Continue to stir-fry until these juices evaporate and the mixture becomes slightly drier. Just before turning off the heat, drizzle in 1/2 tablespoon of sesame oil for a nutty aroma. Adding sesame oil at the end preserves its fragrance.
Step 10
Transfer the deliciously stir-fried pork shoulder bulgogi to a serving plate. Sprinkle with toasted sesame seeds for an extra touch of flavor and visual appeal. Enjoy your homemade Pork Shoulder Bulgogi! It’s also fantastic served over a bowl of hot rice for a quick meal.
