Once the green onions are slightly softened and fragrant, carefully crack 3 eggs directly into the pan. Reduce the heat to medium-low. Cooking on a gentler heat prevents the yolks from breaking and ensures the eggs cook beautifully, making a gentle ‘sizzling’ sound as they set.
