Flavorful Oyster Sauce Spaghetti
Oyster Sauce Spaghetti Made Stir-Fry Noodle Style (Also Great as Stir-Fried Udon!)
Craving pasta but want something different? Instead of the usual tomato, oil, or cream sauces, try this oyster sauce spaghetti made in a stir-fried noodle style. It’s a simple yet wonderfully satisfying dish.
Ingredients- Spaghetti pasta 80g
- 5 large shrimp, peeled and deveined
- 1 small green bell pepper
- 1/2 red bell pepper
- 1/4 onion
- 1/2 white part of a leek
- 1 Tbsp oyster sauce
- 1 Tbsp cooking wine (mirin or sake)
- 1 tsp sugar
- 2 Tbsp chili oil
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking.
Step 2
Bring a large pot of water to a rolling boil. Add half a tablespoon of salt and two to three swirls of cooking oil. Cook the spaghetti according to package directions until al dente (slightly firm to the bite). Reserve about a cup of the pasta water before draining; you’ll use this later to adjust the sauce consistency.
Step 3
While the pasta is cooking, finely chop the white part of the leek. Thinly slice the green and red bell peppers and the onion into strips about 0.1 to 0.2 cm thick.
Step 4
Heat the chili oil in a pan over medium heat. Add the chopped leek and minced garlic, and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic; a gentle sauté is key.
Step 5
Once the leeks and garlic are fragrant, add the prepared shrimp to the pan. Stir-fry until the shrimp turn pink and are about halfway cooked.
Step 6
Add the cooking wine (mirin or sake) to the pan. This helps to remove any fishy smell from the shrimp and adds a subtle sweetness. Stir-fry briefly.
Step 7
When the shrimp are mostly cooked, add the drained spaghetti and the julienned vegetables (bell peppers and onion) to the pan.

Pour in the oyster sauce and sugar. Turn the heat up to high and stir-fry everything quickly to combine the flavors, ensuring the noodles and vegetables are well-coated.
Step 9
If the sauce seems too thick, gradually add some of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency. Continue stir-frying over high heat until the vegetables are tender-crisp.
