Oyster Rice Recipe: Perfecting Electric Rice Cooker Oyster Rice, Baek Jong-won Style
During oyster season, I made some delicious oyster rice! I only regret not making more rice because it was so incredibly tasty! Here’s how to make it!
Oyster Rice Ingredients- 4 servings of short-grain rice (approx. 2 cups)
- 2 bags of fresh oysters (150-200g each)
- 300g daikon radish (about one hand span)
- 3 shiitake mushrooms (use rehydrated dried shiitake if available)
Delicious Seasoning Sauce Ingredients- 1/2 cup chopped scallions
- 1 Cheongyang chili pepper (seeds removed and minced)
- 1 Tbsp minced garlic
- 7 Tbsp soy sauce
- 2 Tbsp water
- 1 tsp sugar
- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp toasted sesame seeds
- 1/2 cup chopped scallions
- 1 Cheongyang chili pepper (seeds removed and minced)
- 1 Tbsp minced garlic
- 7 Tbsp soy sauce
- 2 Tbsp water
- 1 tsp sugar
- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Using an electric pressure rice cooker simplifies this recipe as you don’t need to pre-soak the rice. First, rinse the rice thoroughly. Then, spread the julienned daikon radish evenly over the rinsed rice in the cooker. The radish will release moisture during cooking, making the rice tender and adding a refreshing flavor.
Step 2
Slice the shiitake mushrooms thinly, removing the stems, and arrange them on top of the radish. Feel free to use king oyster mushrooms or other varieties you prefer. Adjust the amount of mushrooms to your liking; adding more will enhance the fragrant aroma and taste of the dish.
Step 3
Gently rinse the fresh oysters in a colander under cold running water, or swirl them lightly in slightly salted water to clean them. Be careful not to break them. Rinse again with fresh water, drain well, and spread them evenly over the other ingredients. Using a generous amount of oysters will significantly enrich the flavor and aroma of the oyster rice.
Step 4
When adding water for cooking in an electric pressure rice cooker, use slightly less water than you would for plain white rice. Aim for the water level to reach just the height where the julienned radish meets the water, as indicated in the photo. This water ratio ensures a fluffy, perfectly cooked texture. Cook using the standard white rice setting.
Step 5
While the rice is cooking, let’s prepare the seasoning sauce. In a small bowl, combine the chopped scallions, minced Cheongyang chili pepper (seeds removed), minced garlic, soy sauce, water, sugar, gochugaru, and toasted sesame seeds. Mix everything well until thoroughly combined. Your delicious sauce is ready!
Step 6
The rice is perfectly cooked! Open the lid to reveal the steam rising and the wonderful, subtle aroma of oysters filling the air. The rice grains are fluffy, and the oysters, radish, and mushrooms are beautifully combined, creating an appetizing dish.
Step 7
Serve the oyster rice generously in bowls and present the seasoning sauce alongside. To eat, spoon the desired amount of sauce over the rice and mix well. The rich flavor of the oysters combined with the savory sauce creates an incredibly satisfying meal. You can also add shredded seaweed or chopped kimchi for extra flavor.
