We’re recreating the incredible experience of enjoying premium Hoengseong beef, savored on our trip to Gangneung via Hoengseong. Though the memories of that delicious, albeit pricey, Hanu (Korean beef) meal are sadly lost from our records, the exquisite taste lingers. Unable to let go of the memory, we made another stop in Hoengseong, this time at the Hoengseong Hanu Village, specifically at a trustworthy butcher’s mart. There, we purchased thinly sliced beef perfect for shabu-shabu. Thanks to a pre-packaged shabu-shabu set that included fresh mushrooms, a variety of vegetables, two kinds of dipping sauces, and a broth seasoning, we enjoyed a simple yet luxurious shabu-shabu meal at home. This recipe highlights the natural flavors of fresh ingredients with a rich and savory broth.

- Hoengseong Hanu Beef (sirloin tip side) for Shabu-Shabu 300g
- Natural Seasoning Seafood Broth 1L (or anchovy-kelp broth)
Cooking Instructions
Step 1
Upon opening the shabu-shabu set, we were pleasantly surprised to find noodle strips included, making the meal even more complete. While one might expect ramen noodles, this set came with special noodles, which was a delightful surprise. Additionally, the set was thoughtfully packed with fresh ingredients for wrapping the beef and vegetables, two distinct dipping sauces, and a seasoning for the broth. Knowing all these components were included made the preparation process significantly easier.
Step 2
The heart of any great shabu-shabu is its broth. This broth was made by simmering ingredients like blue crabs, shrimp heads and shells, shiitake mushroom stems, and leek roots with natural seasonings. To this flavorful base, we simply added the included sauce from the shabu-shabu set, achieving a wonderfully balanced and savory broth without extensive preparation. If you’re making your own broth from scratch, a simple mix of 1 liter of water with 1 tablespoon of soy sauce and 1 tablespoon of rice wine (cheongju) will create a clean and delicious base.
Step 3
Now, let’s prepare the fresh vegetables and mushrooms. Trim the tough ends off the enoki mushrooms and rinse them thoroughly. Clean the base of the oyster mushrooms and wash them as well. Rinse all other vegetables under running water and gently shake off excess moisture. These prepared ingredients will add freshness and depth to the shabu-shabu broth as they cook.
Step 4
Here we have the premium Hoengseong Hanu sirloin tip side, sourced directly from Hoengseong. This exceptional beef needs no complex marinades; its natural quality shines through. Briefly cook slices in the simmering broth until just tender and pink, then dip into the special sauces for an explosion of rich flavor. Experience the pure, unadulterated taste of top-grade Korean beef.

And there you have it – a magnificent mushroom shabu-shabu, featuring fresh vegetables, tender beef, and a deeply flavorful broth! To finish, add the included noodle strips to the simmering broth and cook until done. This not only makes the meal more satisfying but also allows you to savor the delicious broth down to the very last drop.
