Here’s a recipe for a delightful Japchae Tteokbokki, a creative dish made using leftover Japchae and tteok (rice cakes). It’s a simple yet satisfying way to repurpose ingredients, offering a perfect balance of sweet, savory, and spicy flavors with chewy rice cakes and flavorful glass noodles.
Main Ingredients- Prepared Japchae 300g (approx. 1.5 servings)
- Tteokguk Tteok (rice cake soup slices) 300g (briefly soaked in warm water)
Sauce & Seasonings- Kelp or anchovy broth 1 cup (200ml)
- Gochujang (Korean chili paste) 1 Tbsp (heaping)
- Sugar 1 Tbsp (adjust to taste)
- Oligosaccharide 1 Tbsp (for gloss and sweetness)
- Black pepper, a pinch
- Sesame seeds, a pinch (for nutty aroma)
- Sesame oil, a drizzle (for finishing aroma)
- Kelp or anchovy broth 1 cup (200ml)
- Gochujang (Korean chili paste) 1 Tbsp (heaping)
- Sugar 1 Tbsp (adjust to taste)
- Oligosaccharide 1 Tbsp (for gloss and sweetness)
- Black pepper, a pinch
- Sesame seeds, a pinch (for nutty aroma)
- Sesame oil, a drizzle (for finishing aroma)
Cooking Instructions
Step 1
In a pot, combine 1 cup of broth with 1 Tbsp gochujang, 1 Tbsp sugar, 1 Tbsp oligosaccharide, and a pinch of black pepper to create the sauce. Add the prepared tteokguk tteok and begin simmering over medium-low heat, allowing the rice cakes to absorb the sauce gently. Stir occasionally to prevent the rice cakes from sticking together.
Step 2
Once the sauce starts to simmer, add the 300g of prepared japchae. Gently break apart any clumps of japchae and continue to cook, as if stir-frying, until the glass noodles become tender. During this process, the noodles will absorb the broth, deepening the overall flavor.
Step 3
Since the japchae itself is already seasoned and the gochujang sauce has a good flavor profile, additional seasoning is usually not necessary. Taste the dish; if you find it too mild, you can add a tiny pinch of salt or a dash of soy sauce, but most people enjoy it as is.
Step 4
When all ingredients are well combined and simmering, just before turning off the heat, drizzle in a little sesame oil. Finally, sprinkle some sesame seeds on top for a nutty fragrance, and your delicious Japchae Tteokbokki is ready!
Step 5
This ‘Japchae Tteokbokki’ harmoniously blends the rich flavors of japchae with the spicy-sweetness of tteokbokki, offering a satisfying meal without being too heavy. It’s a fantastic way to enjoy a meal or snack using leftover ingredients.
