Ingredients

  • 1/2 stalk scallion
  • A little bit of carrot (about 30g)
  • 2-3 leaves of well-fermented kimchi
  • Leftover beef short ribs (meat removed from bone), as needed
  • 1.5 bowls of warm cooked rice
  • 1 packet seasoned seaweed (gim)
  • A drizzle of sesame oil

First, finely chop the scallion. Heat a little cooking oil in a pan over medium-low heat and stir-fry the chopped scallions. It’s important to cook them slowly until they release their sweet aroma and create fragrant scallion oil. This step significantly deepens the flavor of the fried rice.

Finely mince the carrot, and chop the kimchi into small pieces. Remove the meat from any leftover beef short ribs and dice it into bite-sized pieces. Add the prepared carrot, kimchi, and galbi meat to the pan along with the scallion oil. Stir-fry everything together quickly over high heat. Give it a good ‘shake shake’ to combine all the ingredients.
