Introducing a delightful Mexican fusion quesadilla featuring tender chicken, crisp vegetables, and gooey cheese that create a fantastic harmony of flavors. It’s a simple yet impressive meal or snack. The addition of curry powder and chili flakes adds an extra layer of deliciousness.
Main Ingredients- 5 pieces chicken tenderloin (cut into bite-sized pieces)
- 2 flour tortillas
- 1/6 bell pepper (finely diced)
- 1/2 ripe tomato (seeds removed, finely diced)
- 1/4 onion (finely diced)
- Generous amount of shredded mozzarella cheese
- A little cooking oil
Seasoning- 1 Tbsp chili powder
- 2/3 Tbsp curry powder
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, wash the chicken tenderloin, pat it dry, and cut it into bite-sized pieces, about 2-3 cm. Cutting them too large might increase cooking time, so aim for a manageable size.
Step 2
Place the cut chicken in a bowl. Add 1/2 Tbsp chili powder, 1/3 Tbsp curry powder, and 1/2 Tbsp minced garlic. Mix well to ensure the seasoning coats the chicken evenly. Let it marinate for about 10 minutes for a deeper flavor.

Finely dice the bell pepper (or paprika), tomato (seeds removed), and onion to a size similar to the chicken pieces, or slightly smaller. Finely dicing the vegetables ensures the filling is distributed evenly and doesn’t clump.

Heat a skillet over medium heat and add a little cooking oil. Add the marinated chicken and stir-fry until it’s golden brown and fragrant. Once cooked, transfer the chicken to a plate and set aside.

In the same pan used for the chicken, add the diced vegetables. Sauté until the vegetables become slightly translucent. Then, add the remaining 1/2 Tbsp chili powder and 1/3 Tbsp curry powder and stir-fry together. Cook until the natural sweetness of the vegetables blends with the seasonings.

Now it’s time to cook the tortillas. Lightly grease a clean pan with a little cooking oil. Place a tortilla in the pan and cook over medium heat, flipping it occasionally until it’s lightly golden brown and slightly crisp. Spreading the oil evenly on the tortilla as it cooks will make it even more delicious. This step is key for a great quesadilla.
Step 7
Prepare the mozzarella cheese using a microwave. If using frozen shredded mozzarella, microwave it for about 30 seconds, twice, until it’s slightly melted. Be careful not to over-microwave, as it can become hard. (Refrigerated cheese can be used as is).

On one half of the cooked tortilla, spread a generous layer of mozzarella cheese. Using plenty of cheese will make your quesadilla extra creamy and flavorful.
Step 9
Layer the sautéed chicken and vegetables over the cheese. Then, fold the other half of the tortilla over to create a half-moon shape. Place it back on the skillet and cook over low heat until the cheese is melted and the tortilla is golden brown. This helps seal the filling inside.
Step 10
Carefully transfer the cooked quesadilla to a plate. Cut it into desired portions using kitchen shears or a knife. Each bite will be a delightful combination of crispy tortilla and rich filling.
