Super Easy Duck Leg Steak Recipe
If you usually think of duck breast steaks or smoked duck when you eat duck, today I’m going to share a recipe for a delicious steak using duck leg meat! I’ll explain it in detail so that anyone can easily follow it at home without any special techniques. Enjoy a special meal with this delicious duck leg steak!
Main Ingredients- 2 Duck legs
- 1/4 Onion
- 1/4 Carrot
- 4 cloves Garlic
- 1 sprig fresh Thyme or other herbs
- 20g Unsalted butter
- 15ml Cooking oil

Cooking Instructions
Step 1
The first step to your duck leg steak! Carefully trim any excess fat from the duck legs with a knife. Then, thoroughly pat the surface of the duck legs dry with paper towels. This ensures the seasoning adheres well and the skin crisps up beautifully.
Step 2
We’ll score the duck legs so they cook evenly and become tender inside. Make shallow cuts about 2-3 cm apart on the skin side, and a few shallow cuts on the flesh side as well. This helps the seasoning penetrate deeply and speeds up the cooking process.
Step 3
Heat a pan over medium heat with 10g of butter and 15ml of cooking oil. Place the duck legs skin-side down and sear until the skin is a beautiful, golden-brown color. Be cautious of splattering oil.
Step 4
At this stage, focus on achieving a delicious color rather than cooking the duck legs completely through. Sear both sides for about 2-3 minutes each to develop a rich flavor and attractive appearance.
Step 5
Now it’s time to season! In a clean plastic bag, combine the paprika seasoning (30g), curry powder (30g), salt (2g), pepper (1g), and sugar (15g). Mix them well. Add the seared duck legs to the bag and shake it gently to ensure the seasoning coats the duck legs evenly. Thorough coating will enhance the flavor significantly.
Step 6
Place the seasoned duck legs, 4 cloves of garlic, and the sprig of thyme (or other herbs) onto a piece of parchment paper. Wrap everything up tightly to form a neat parcel, ensuring the contents don’t spill out. This method helps to keep the duck juicy as it cooks.
Step 7
Place the sealed parchment paper package into a microwave-safe dish. Microwave for approximately 7 minutes. Be very careful when removing the dish from the microwave, as the duck legs will be hot! Use oven mitts for safety.
Step 8
While the duck legs are cooking, let’s prepare the side vegetables. Thinly slice the onion and carrot. Melt the remaining 10g of butter in a pan over low heat, then add the sliced onion and carrot. Sauté them gently, seasoning lightly with salt and pepper, until the duck legs are finished in the microwave.
Step 9
And finally, it’s ready! Carefully remove the duck leg steak from the microwave. Arrange it on a plate, garnish with the cooked garlic and herbs, and serve alongside the nicely sautéed onion and carrot mixture.
