Main Ingredients- 1 potato (medium size)
- 0.5 onion (medium size)
- 1 cheongyang chili pepper
Seasoning Ingredients- 1.5 Tbsp restaurant-style doenjang jjigae seasoning mix
- 1 Tbsp anchovy sauce (optional, adds umami)
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp ‘Yeondu’ (vegetable essence/soy sauce alternative)
- 0.5 Tbsp minced garlic
- 1.5 Tbsp restaurant-style doenjang jjigae seasoning mix
- 1 Tbsp anchovy sauce (optional, adds umami)
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp ‘Yeondu’ (vegetable essence/soy sauce alternative)
- 0.5 Tbsp minced garlic
Cooking Instructions
Step 1
In a pot, add 1.5 Tbsp of the restaurant-style doenjang jjigae seasoning mix. Pour in a small amount of water and gently stir over low heat to dissolve the paste. This step ensures the paste melts smoothly into the broth, creating a richer flavor.
Step 2
Once the doenjang paste is well dissolved, add 0.5 Tbsp of minced garlic and mix it in. The garlic’s aroma will gently infuse into the stew, harmonizing beautifully with the soybean paste.
Step 3
Now, pour in 300ml of water. Add the potato (1) and onion (0.5), cut into bite-sized pieces. Stir in 1 Tbsp of anchovy sauce (optional for extra umami), 1 Tbsp of red pepper flakes, and 1 Tbsp of ‘Yeondu’. Stir everything together, cover the pot, and bring to a rolling boil over high heat. As the potato and onion cook, the broth will become even more flavorful.
Step 4
Check if the potato is tender. Once cooked, add the finely chopped cheongyang chili pepper (1) and let it simmer for another moment. The spiciness of the chili pepper cuts through any richness, leaving a clean and satisfying taste. Once all ingredients are cooked and the flavors have melded, turn off the heat and enjoy your delicious Doenjang Jjigae! Serve hot with a bowl of rice.
