Main Ingredients

  • 2 chicken thighs (approx. 500g)
  • 6 cloves garlic
  • 1/2 onion
  • 1/2 each of bell peppers (red, yellow, etc.)
  • 1 king oyster mushroom
  • 1 green bell pepper
  • 2 eggplants
  • 1 handful broccoli sprouts
  • 1 handful mixed nuts

Chicken Marinade & Sauce

  • 7 Tbsp red wine
  • 3 Tbsp ketchup
  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • Pinch of black pepper
  • Pinch of salt

Cooking Instructions

Step 1

Trim the excess fat and skin from the chicken thighs, then cut them into bite-sized pieces. In a bowl, combine the chicken with all the steak sauce ingredients (red wine, ketchup, oyster sauce, soy sauce, honey, pepper, and salt). Mix well and let it marinate for 20 minutes. You can also add minced garlic at this stage for an even deeper flavor.

Prepare the onion, bell peppers, and king oyster mushrooms by dicing them into pieces roughly the same size as the chicken. Mince or thinly slice the garlic and add it to the chicken in step 1 to marinate. Cutting the vegetables into similar sizes ensures they cook evenly and makes for a more attractive presentation.

Lightly score the skin of the eggplants, then slice them into 1cm thick rounds. Place the sliced eggplants in a bowl, sprinkle with a little salt, and let them sit for 10 minutes. These prepared eggplants will be stir-fried with the green bell pepper later.
