Flavorful Chicken Quesadilla

As a big fan of Mexican cuisine, quesadillas are always a must-order item at Mexican restaurants. Today, I’ve made a chicken quesadilla using leftover tortillas and chicken breast. You can achieve a richer flavor by incorporating spaghetti sauce!

Ingredients

  • 3 Tortillas
  • 1 Onion, finely chopped
  • 1 Bell Pepper, finely chopped
  • 1 piece Chicken Breast
  • 2 Tbsp Cooking Oil
  • Pinch of Salt
  • A little Cooking Wine or Sake (to remove chicken odor)
  • 0.5 Tbsp Minced Garlic
  • 200g Tomato Spaghetti Sauce
  • 1/4 Tbsp Chicken Stock
  • 100g Mozzarella Cheese

Cooking Instructions

First, finely chop 1 onion. Using a mandoline slicer can help achieve uniform chopping.

Remove the seeds from 1 bell pepper and chop it into small pieces, similar in size to the chopped onion. The crisp texture of the bell pepper will enhance the quesadilla’s flavor.

Cut the chicken breast into bite-sized pieces, about 1cm cubes. Avoid cutting them too small, as they might break apart during cooking. This size ensures a good bite in the quesadilla.

Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the chopped chicken breast. Sprinkle with two pinches of salt and a splash of cooking wine or sake to eliminate any gamey odor.

Stir-fry the chicken breast over high heat until it turns opaque. Be careful not to overcook it, as it can become tough. The goal is to sear the outside quickly.

Once the chicken breast is mostly cooked, add the chopped onion and bell pepper to the pan. Add another tablespoon of cooking oil, 0.5 tablespoon of minced garlic, and a pinch of salt. Stir-fry until the vegetables are tender.

Continue stir-frying over high heat until the onions become translucent and soft. This process brings out the natural sweetness of the vegetables, complementing the chicken.

When the onions are adequately sautéed, add about 200g of tomato spaghetti sauce and 1/4 tablespoon of chicken stock. The chicken stock adds a boost of umami, enhancing the overall flavor of the filling. Stir everything together and cook for another minute.

Turn off the heat. Sprinkle with black pepper twice and mix well. This simple step adds a final touch of flavor. For an extra layer of flavor, you can add dried herbs like oregano or parsley here.

Place a tortilla in a dry frying pan over low heat. Cook for about 30 seconds per side until lightly golden. Flip the tortilla and sprinkle a generous amount of mozzarella cheese on one half only. This makes folding easier later.

Spoon the prepared chicken and vegetable filling onto the half of the tortilla with the cheese. Don’t overfill, or the quesadilla might split open.

Fold the empty half of the tortilla over the filling to create a half-moon shape. Gently press down and cook until the cheese is melted and both sides of the tortilla are golden brown. Cooking over low heat ensures the cheese melts thoroughly without burning the tortilla.
