For my son who absolutely loves meat and can’t go a day without it, I try to make meat dishes less oily and more enjoyable. Today, we’re making a one-bowl meal: Chashu Rice Bowl! This recipe focuses on creating a delightful and less greasy experience, perfect for a satisfying meal.

  • Pork Belly (2 thick strips, approx. 400-500g)
  • 1/2 Onion
  • 5 cloves Garlic

Chashu Braising Sauce

  • 1.5 Tbsp Soy Sauce
  • 3 Tbsp Water
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 1 Tbsp Mirin (or cooking wine)
  • 1/2 Tbsp Sugar

Cooking Instructions

Step 1

Place the two thick strips of pork belly in a pan over medium-low heat. Grill slowly, turning occasionally, until both sides are golden brown and nicely seared. This process helps render out excess fat and enhances the flavor.

Once grilled, slice the pork belly into bite-sized pieces, about 1cm thick. Slicing them slightly thicker will provide a more satisfying chew.

Arrange the sliced pork belly on a few layers of paper towels. Gently press down to absorb any excess oil. This step is crucial for a cleaner, less greasy finish to your rice bowl.

In a small pot or pan, combine the soy sauce, water, plum extract, mirin, and sugar. Stir well to create the braising sauce. Add the thinly sliced onion and whole garlic cloves to the sauce. Bring to a simmer over medium-low heat. (Tip: For an extra touch of sweetness, you can lightly sauté the onion slices in the pan before adding the sauce and simmering.)
