Main Ingredients- 1 Frozen Pollock (approx. 600-800g)
- 10 pieces Radish (approx. 300g)
- 1 handful Green Onions (approx. 100g)
Braising Sauce- 100ml Soy Sauce (approx. 1/2 cup)
- 50ml Fish Sauce (or Tuna Extract) (approx. 1/4 cup)
- 140ml Corn Syrup (or Rice Syrup) (approx. 2/3 cup)
- 1 Tbsp Minced Garlic (15g)
- 1 heaped Tbsp Fine Gochugaru (Korean chili powder) (15g)
- 1 heaped Tbsp Coarse Gochugaru (Korean chili powder) (15g)
- 1/2 tsp Ginger Powder (2g)
- 1/2 tsp Black Pepper Powder (2g)
- 800ml Water (approx. 3.5 cups)
- 100ml Soy Sauce (approx. 1/2 cup)
- 50ml Fish Sauce (or Tuna Extract) (approx. 1/4 cup)
- 140ml Corn Syrup (or Rice Syrup) (approx. 2/3 cup)
- 1 Tbsp Minced Garlic (15g)
- 1 heaped Tbsp Fine Gochugaru (Korean chili powder) (15g)
- 1 heaped Tbsp Coarse Gochugaru (Korean chili powder) (15g)
- 1/2 tsp Ginger Powder (2g)
- 1/2 tsp Black Pepper Powder (2g)
- 800ml Water (approx. 3.5 cups)
Cooking Instructions
Step 1
First, let’s prepare the radish, which is key to the deliciousness of this braised dish. Cut 10 pieces of radish into bite-sized pieces, about 5-10cm in length. Arrange the cut radish at the bottom of a pot. In a separate bowl, combine the sauce ingredients: 100ml soy sauce, 50ml fish sauce, 140ml corn syrup, 1 Tbsp minced garlic, 1 heaped Tbsp fine gochugaru, 1 heaped Tbsp coarse gochugaru, 1/2 tsp ginger powder, and 1/2 tsp black pepper powder. Add 800ml of water and stir to mix well. Pour this sauce mixture over the radish in the pot.

Now, cover the pot with a lid and bring it to a boil over high heat. Let it simmer until the radish is tender and cooked through, which should take about 25-30 minutes. To ensure even cooking and prevent sticking, it’s a good idea to open the lid occasionally and ladle some of the braising liquid over the radish.

Here’s a simple way to check if the radish is cooked: gently pierce it with chopsticks. If the chopsticks slide in easily without resistance, it means the radish is perfectly tender and ready for the next step.

Prepare your cleaned pollock. If using frozen pollock, rinse it under cold water to thaw. Then, cut the pollock into four serving-sized pieces. Carefully place the cut pollock pieces on top of the tender radish in the pot.
