Cooking Instructions
Step 1
Let’s start by preparing all the fresh ingredients for our Bibimbap. Today, we’ll be using shiitake mushrooms, crisp carrots, tender zucchini, and sweet onions. We’ll also add seasoned bean sprouts, fresh lettuce, and our special beef soboro. First, thinly slice the shiitake mushrooms. Slicing them thinly will ensure a pleasant texture after cooking.

Next, use a mandoline or a sharp knife to julienne the carrot thinly. If the carrot pieces are too thick, they can overpower the other ingredients in the bibimbap. Thinly sliced carrots blend beautifully with everything else.

Julienne the zucchini to match the thickness of the carrots, and thinly slice the onion. These vegetables will soon be sautéed together.

Now, let’s make the star of our Bibimbap: the beef soboro! In a bowl, combine the ground beef with 1 tablespoon of minced garlic and 2 tablespoons of soy sauce-based Korean BBQ sauce. Mix it well with your hands, ensuring the seasoning is evenly distributed.

It’s time to sauté our vegetables! Heat a little cooking oil in a pan over medium heat. Add the sliced zucchini and sauté until tender. Season with a tiny pinch of salt to enhance its natural sweetness. Sautéing over medium heat prevents burning and ensures tenderness.

Once the zucchini is slightly cooked, add the thinly sliced shiitake mushrooms to the pan. Sauté them along with the zucchini, adding another small pinch of salt. This will bring out their wonderful earthy aroma.

Now, add the julienned carrots. Sauté them very briefly – just enough to slightly soften them. It’s important not to overcook the carrots; you want them to retain a slight crunch for texture. Since carrots can be eaten raw, a quick sauté is perfect for both flavor and texture.

Finally, add the seasoned ground beef to the pan. Break it up with your spatula and stir-fry until it’s cooked through and resembles a crumble. Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for a beautiful sheen and nutty fragrance. This completes our delicious beef soboro!
