Craving a simple yet satisfying brunch on a lazy weekend morning? I put my thinking cap on and came up with this bagel toast, inspired by the popular Isaac Toast and Eggdrop sandwiches! It’s a delicious way to solve your weekend brunch dilemma.
Ingredients- 1 Bagel (if frozen, thaw at room temperature for 30 minutes)
- 0.5 Tbsp Minced Garlic
- 2 Slices Butter
- 0.5 Tbsp Allulose (for butter sauce)
- 2 Eggs
- 2 Strips Bacon
- Pinch of Black Pepper
- 3 Romaine Lettuce Leaves
- 2 Slices Cheese
- 2 Tbsp Mayonnaise (for mayo sauce)
- 1 Tbsp Sriracha Sauce (for mayo sauce)
- 1 Tbsp Allulose (for mayo sauce)
- Mustard Sauce (to taste)
Cooking Instructions
Step 1
First, let’s make the garlic butter sauce to spread on the bagel before toasting. In a small bowl, combine 2 slices of butter, 0.5 tablespoon of minced garlic, and 0.5 tablespoon of allulose. Mix them together until smooth. This will add a wonderful garlicky aroma and a subtle sweetness to your bagel.
Step 2
Next, we’ll prepare the creamy mayo sauce, inspired by Eggdrop sandwiches. In a clean bowl, mix 2 tablespoons of mayonnaise, 1 tablespoon of sriracha sauce for a bit of heat and sweetness, and 1 tablespoon of allulose. Stir until well combined. This sauce adds a rich, tangy, and slightly spicy flavor.
Step 3
Cut the prepared bagel horizontally in half using a serrated knife. This makes it easier to fill and assemble the sandwich. Remember to fully thaw frozen bagels before starting!

Cut the bacon into bite-sized pieces. In a bowl, whisk together the chopped bacon and 2 eggs. Add a pinch of black pepper and mix gently to prepare for making scrambled eggs.
