Flavorful Baek Jong-won Style Wild Chive Seasoning Sauce
Making Baek Jong-won’s Luxurious Wild Chive Sauce for Chestnut Rice from ‘Taste of Neighbours’
I’ve recreated the wild chive seasoning sauce featured on ‘Taste of Neighbours’ in Gongju, perfect for mixing with rice! This special sauce, when mixed with plain white rice, was incredibly delicious. It adds a wonderful depth of flavor that elevates a simple meal into something special. Perfect for adding a touch of gourmet to your everyday dining!
Ingredients- 1 bunch of fresh wild chives (dallae)
- 250g finely minced pork
- 3 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or corn syrup)
- 3 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp minced garlic
- 2 Cheongyang chili peppers (or other hot chili peppers), finely chopped
- 2 Tbsp sesame oil
- A little cooking oil
- A little toasted sesame seeds (optional)
Cooking Instructions
Step 1
First, lightly grease a pan with a small amount of cooking oil. Add the 250g of minced pork and stir-fry over medium heat. Cook until the pork is browned and releases its savory aroma. Break up any clumps with chopsticks or a spatula to ensure even cooking.
Step 2
Once the pork is nicely browned and fragrant, add 3 Tbsp of soy sauce and 1 Tbsp of oligosaccharide. Continue to stir-fry, allowing the sauce to coat the pork and develop a rich flavor.
Step 3
The original recipe from ‘Taste of Neighbours’ suggests a 1:1 ratio of pork to soy sauce. However, I found 3 Tbsp of soy sauce to be perfectly seasoned for my preference, providing a balanced savory taste without being too salty. Feel free to adjust the soy sauce quantity based on your taste.
Step 4
Now, let’s prepare the star ingredient: the wild chives. Thoroughly wash 1 bunch of wild chives under running water to remove any dirt or debris. Trim the roots and then chop the chives into approximately 1 to 1.5 cm pieces. Cutting them too finely might result in a grassy flavor, so aim for a bite-sized cut.
Step 5
In a large mixing bowl, combine the chopped wild chives with 1 Tbsp of minced garlic. Mix well. Next, add the 2 finely chopped Cheongyang chili peppers for a touch of heat. You can remove the seeds if you prefer a milder spice.
Step 6
To complete the seasoning, add 3 Tbsp of red pepper flakes, 2 Tbsp of sesame oil for a nutty aroma, and a sprinkle of toasted sesame seeds. Mix everything together until well combined.
Step 7
While plain wild chive sauce offers a fresh, zesty flavor, adding the cooked pork transforms it. The pork adds a savory depth and a satisfying richness that beautifully complements and balances the unique pungent notes of the wild chives, creating a more complex and hearty taste profile.
Step 8
Now, it’s time to incorporate the key element from the ‘Taste of Neighbours’ recipe: the stir-fried minced pork. Add the cooked pork to the bowl with the wild chive mixture and stir everything together. The residual heat from the pork will help release the aromatic oils of the chives.
Step 9
For an extra touch of richness, I decided to add a little more sesame oil. Taste the mixture and adjust seasonings if needed. This step is optional, but I found it enhanced the overall aroma and flavor.
Step 10
And there you have it! A wonderfully delicious ‘Baek Jong-won Style Wild Chive Seasoning Sauce’ is ready. Its rich aroma and balanced flavors are truly mouthwatering!
Step 11
Although I didn’t have chestnut rice, I mixed this delectable wild chive sauce with warm white rice. The result was so satisfying, it could easily be called a ‘Wild Chive Bibimbap’. If you’re looking to create a special meal at home, give this incredible sauce recipe a try!
