Essential Ingredients- 4 slices thick-cut bacon
- 2 shiitake mushrooms
- 1 sweet potato
- 2 asparagus spears
- 2 cups uncooked rice, soaked
- 2 cups water
- A little cooking oil
Optional Ingredients- 1 Tbsp butter
- 2 Tbsp soy sauce
- 1 Tbsp butter

Cooking Instructions
Step 1
First, trim the stems from the shiitake mushrooms and slice them thinly. Wash the sweet potato thoroughly and dice it into 1.5cm cubes, keeping the skin on for extra nutrients and texture. This preparation ensures all ingredients are ready for cooking.
Step 2
Trim the tough ends off the asparagus spears, then cut them into 3cm pieces. Cut the bacon into roughly 2cm thick strips. These sizes are ideal for integrating well into the rice.
Step 3
Heat a little cooking oil in a pot or rice cooker over medium heat. Add the bacon and cook until it’s nicely browned and has rendered some of its fat. Then, add the asparagus and stir-fry for another minute until slightly tender. Remove the cooked bacon and asparagus from the pot and set aside on a plate. This step enhances the overall flavor.
Step 4
In the same pot, add the soaked rice. Arrange the sliced shiitake mushrooms, diced sweet potato, and the reserved cooked bacon and asparagus evenly over the rice. Pour in the 2 cups of water. The water level might not cover everything completely, which is normal.
Step 5
Cook the rice: Start on high heat for about 3 minutes until the water begins to boil. Immediately reduce the heat to low and simmer gently for 15 minutes. Once the cooking time is up, turn off the heat and let the rice steam, covered, for an additional 5 minutes. This steaming process allows the rice to cook evenly and become fluffy.
Step 6
When the rice is ready and still hot, add 1 tablespoon of butter to the pot. Gently mix and fluff the rice with a spatula, allowing the butter to melt and coat the grains. This adds a wonderful richness and sheen. For an extra flavor boost, you can add 2 tablespoons of soy sauce and mix it in. Enjoy your delicious Bacon Rice Bowl!
