- 3 Tbsp Soy Sauce (Guk-ganjang)
- 1 Tbsp Soup Soy Sauce (for extra umami)
- 2 Tbsp Plum Extract (for sweetness and shine)
- 3 Tbsp Sugar (adjust to taste)
- 0.5 Tbsp Oyster Sauce (for a burst of flavor)
Cooking Instructions
Step 1
First, let’s boil the eggs. Fill a pot with enough water to cover the eggs and carefully place them in. Boil over medium-high heat for 20 minutes. Once boiled, immediately rinse the eggs with cold water 2-3 times, then soak them in cold water for at least 10 minutes. This helps ensure the shells peel off easily.
Step 2
While the eggs are cooling, let’s make the delicious braising sauce. Pour 2 cups of water (approximately 400ml, using a standard paper cup) into a pot. This water will form the base of our savory sauce, creating moist and flavorful braised eggs.
Step 3
Now, add all the ingredients for the golden ratio seasoning. Mix in 3 Tbsp Soy Sauce, 1 Tbsp Soup Soy Sauce, 2 Tbsp sweet Plum Extract, 3 Tbsp Sugar, and 0.5 Tbsp Oyster Sauce for that extra depth of flavor! Stir everything well to combine.
Step 4
Carefully peel all the cooled hard-boiled eggs. Make sure all the shell fragments are removed for a clean presentation.
Step 5
Add all the peeled hard-boiled eggs into the pot with the sauce. Ensure the eggs are submerged in the sauce as much as possible.
Step 6
Add the whole garlic cloves and chilies to the pot along with the eggs to enhance the flavor. If you prefer a spicier taste, use fresh green chilies. For a milder flavor, dried chilies work perfectly. (Pro Tip: Adding one or two dried anchovies to the pot while braising will significantly boost the umami flavor!)
Step 7
Finally, simmer uncovered over medium-low heat for about 10-15 minutes, or until the sauce has reduced to a desirable consistency. Braising until the sauce is slightly thickened will result in perfectly seasoned eggs. Flip the eggs occasionally during cooking to ensure even coloring and flavor distribution. Enjoy this delightful banchan with a bowl of warm rice – it’s a true rice-thief!
