Grains- 2 cups glutinous rice
- 1 cup red beans
- 1 cup black beans
- 1 cup proso millet
- 1 cup foxtail millet
Cooking Instructions
Step 1
Begin by soaking the grains. Soak the foxtail millet for 20 minutes and the proso millet for at least 1 hour in water. After soaking, drain them thoroughly using a sieve.
Step 2
Boil the black beans: In a pot, combine 7.5 cups of water and 1 cup of soaked black beans. Cover with a lid and simmer over medium heat for about 1 hour until tender.
Step 3
Boil the red beans: In a separate pot, add enough water to generously cover 1 cup of red beans. Bring to a boil over high heat for 10 minutes. Discard this first water. Keep the red beans in the pot. Add 7 cups of fresh water, cover, and simmer over medium heat for approximately 55 minutes, or until the red beans are soft.
Step 4
Utilize the bean cooking water: Drain the black beans cooked for 1 hour and the red beans cooked for 55 minutes. Reserve the cooking water from the black beans (about 2 cups) and the red beans (about 1 cup). Do not discard this flavorful liquid; it will be used to cook the rice.
Step 5
Soak the glutinous rice: In a bowl, combine 2 cups of glutinous rice with 1 cup of the reserved black bean water and 1/2 cup of the reserved red bean water. Let it soak for 20 minutes. Afterward, drain the rice, discarding the soaking liquid.
Step 6
Prepare the steamer and mix grains: Line the steamer basket with a damp (well-wrung) cheesecloth or thin cotton cloth. Add the soaked glutinous rice, red beans, black beans, proso millet, and foxtail millet to the steamer and mix them evenly.
Step 7
To ensure even steaming, create a slight well in the center of the grains. This allows steam to circulate more effectively, resulting in perfectly cooked rice.
Step 8
First Steaming: Once the water in the steamer pot is boiling vigorously, carefully place the steamer basket inside and cover it with the lid. Steam over high heat for about 50 minutes. Ensure there is enough water in the bottom pot to last through the steaming time.
Step 9
Add Seasoning Water: After the initial 50 minutes of steaming, mix the remaining reserved black bean water and red bean water. Dissolve 2 teaspoons of salt into this liquid. Sprinkle about half of this seasoned water evenly over the grains in the steamer. (Do not use all the seasoned water at once.)
Step 10
Second Steaming and Finishing: Cover the steamer again and continue to steam over high heat for another 20 minutes. Sprinkle the remaining seasoned water evenly over the grains, and gently toss the grains to distribute the moisture. Cover once more and steam for a final 10 minutes to complete the delicious Ogokbap.
